Ramson & Wild Garlic – Habitat, Identification and Recipes
Ramsons are a member of the onion family (allium). It is also known as wild garlic and a myriad of other names. It is a mild garlic flavoured spring vegetable, growing wild in woodland and in some gardens. Ramson is a native plant and grows wild in Ireland. Ramson plants flower in March and April, sometimes even into May. Like many other members of the allium family, its flowers are much loved by bees. Ramsons have a spreading habit. Because of this, it can become a nuisance in gardens so may be best enjoyed foraged from the wild.
Habitat and Identification
Ramsons, thrive in specific habitats that offer the ideal conditions for their growth. They are commonly found in moist, shaded woodlands, often carpeting the forest floor with their lush green foliage. Their preferred habitats include deciduous and mixed woodlands, where they benefit from the dappled sunlight filtering through the trees. Ramsons can also be spotted in damp meadows and along stream banks, particularly in areas with rich, fertile soil.
Identifying ramsons is relatively straightforward, especially during their flowering period from March to May. The plant typically grows to a height of around 10-30 centimeters. The plant has long, slender leaves that are lance-shaped and taper to a point. The leaves emanate from a central bulbous base, resembling those of lily-of-the-valley but with a distinct garlic scent when crushed. As the season progresses, ramsons produce delicate white flowers arranged in spherical clusters, adding a beautiful touch to their woodland habitat.
When foraging for ramsons, it’s essential to positively identify the plant to avoid any potential confusion with toxic look-alikes. No Ramsons? Try Three Cornered Leek Instead
In Ireland, we also have a second form or wild garlic, known as Three cornered leek. It has similar habitat and growth habits as ramsons, although slightly taller, with slim leaves and white bell-shaped flowers. It is easily identified due to its leaves and stalks triangular shape when cross sectioned. How to use Ramsons in Cooking
All parts of the plant are edible. Young leaves are picked from February onwards and the flower buds and stalks are wonderful spring delicacies. They can be used to make Ramson Capers, lightly stir fried with butter and sea salt, in a noodle broth with foraged spring greens, fermented either on their own or added to kimchi, or made into a delicate light green herb-salt. Picked early in the season, the tender young leaves are also a perfect ingredient in a fresh, low-airmile, Seasonal Ramson Pesto or mixed with other green vegetables in a vibrant spring soup.
