Ingredients

Berry Mont Blanc

  • white chocolate, as needed
  • strawberry purée, as needed
  • strawberries, as needed
  • pre-made tart crusts, as needed

Meringues

  • 30 grams egg whites
  • 30 grams granulated sugar
  • 30 grams powdered sugar
  • 30 grams almond powder

Mascarpone Cream

  • 100 grams mascarpone
  • 100 milliliters whipped cream
  • 15 grams sugar
  • a dash of rum

Strawberry Cream

  • 100 grams whipped cream (whipped to soft peaks)
  • 120 grams mascarpone
  • 30 milliliters strawberry purée
  • 20 grams powdered sugar

Topping

  • pink dragees, as needed

Steps

  1. Melt the white chocolate using a water bath.
  2. Dip one side of the knife in melted white chocolate and wipe against a sheet of baking paper.
