Ingredients
Berry Mont Blanc
- white chocolate, as needed
- strawberry purée, as needed
- strawberries, as needed
- pre-made tart crusts, as needed
Meringues
- 30 grams egg whites
- 30 grams granulated sugar
- 30 grams powdered sugar
- 30 grams almond powder
Mascarpone Cream
- 100 grams mascarpone
- 100 milliliters whipped cream
- 15 grams sugar
- a dash of rum
Strawberry Cream
- 100 grams whipped cream (whipped to soft peaks)
- 120 grams mascarpone
- 30 milliliters strawberry purée
- 20 grams powdered sugar
Topping
- pink dragees, as needed
Steps
- Melt the white chocolate using a water bath.
- Dip one side of the knife in melted white chocolate and wipe against a sheet of baking paper.
